Squats and DLs are the only two movements I am really doing for legs. Is
that enough? I don't want quads as big as Volkswagons (yet anyway) but I
definetely don't want the lollipop look either.

Deadlifts aren't going to do your quads so much as your back, even if
you do them perfectly.

Squats will burn them, but take trained quads to do correctly in the
first place so you don't end up just using your back and glutes.

Use the leg-press and leg-extension decks, and get yourself
a real bicycle and train on hilly terrain. Mashing==mass.
